Protein Cottage Cheese Wrap (My current obsession)
I originally saw this recipe floating around online, and honestly, I have no idea who the original creator was. It’s one of those viral recipes that seems to be everywhere right now. What I do know is that it has become one of my favorite meal-prep staples.
This isn’t trying to be bread. It isn’t trying to be a tortilla. It’s its own thing, and once you get the texture right, it’s surprisingly versatile.
I usually make one batch and split it into two wraps. I’ll have half earlier in the day and save the other half for later. With over 40 grams of protein in the recipe, it keeps me incredibly full and satisfied. Some days I’ll add chicken, turkey, or another protein source, but honestly, I don’t always feel like I need to. It works just as well loaded with vegetables.
This morning’s version was a barbecue chicken wrap and came in under 300 calories for breakfast. I was absolutely stuffed afterward.
One of my favorite tricks is using it as a pizza crust. Just top it with sauce, cheese, and whatever toppings you like, then pop it back in the oven for a few minutes.
The biggest tip I can give you is this:
Do not undercook it.
You want to blend the cottage cheese until it’s completely smooth. No cottage cheese texture. No curds. Just a smooth batter.
When it bakes, don’t pull it out when it’s still pale or egg-colored. The wrap needs to get deeply golden brown, almost to the point where you think it might be getting too dark. That’s what gives it enough structure to actually hold together as a wrap.
About halfway through baking, I carefully remove it from the oven, place another piece of parchment paper on top, flip it over, and continue baking. Browning both sides makes a huge difference in the final texture.
As always, every oven is a little different, so use the timing as a guideline and watch the color more than the clock.
Protein Cottage Cheese Wrap
Ingredients
225 g low-fat cottage cheese
2 large eggs
Instructions
Preheat oven to 325°F.
Blend cottage cheese and eggs until completely smooth.
Line a baking sheet or baking pan with parchment paper.
Pour mixture onto parchment and spread evenly into a thin rectangle or circle.
Bake for approximately 20 to 25 minutes.
Carefully flip onto a fresh piece of parchment paper.
Return to oven and bake another 20 to 25 minutes, or until both sides are deeply golden brown.
Cool slightly before filling and rolling.
